The peaches from our Iowa Food Cooperative are delicious. So let's make some peaches and berry crisp.
I was a little short of the 6 peaches that I needed, so I thawed out some frozen berries (strawberries, blackberries and blueberries) and added them into the peaches. It turned out to be really tasty!
It baked up to be such a beautiful deep color.
Peach and Berry Crisp
Ingredients
4 peaches pitted, peeled and sliced
2 cups of frozen berries (I used a mix of strawberries, blackberries and blueberries); thawed and drained (get as much of the moisture out of the berries as you can)
2 Tablespoon of lemon juice
2 teaspoon of almond extract
2 Tablespoon of cornstarch
1 cup white sugar
3/4 cup unsalted butter, softened
1/2 cup brown sugar
1-1/3 cups all purpose flour
2/3 cup oats (either old fashioned or quick)
1/2 teaspoon salt
1 teaspoon cinnamon
Directions
Preheat oven to 350°
In a large mixing bowl mix together the lemon juice, almond extract and cornstarch.
Add the peaches, berries and sugar - toss gently.
Pour fruit mixture into a greased 9" x 9" baking dish.
Beat together the butter and brown sugar until creamy.
Add the flour, oats, salt and cinnamon. It will be crumbly.
Sprinkle the crumbled mixture evenly over the fruit mixture.
Bake for 40 to 45 minutes or until the top is golden brown and bubbling.
Let it cool for about 15 to 20 minutes, then serve warm with a scoop of ice cream.
