Fall = Apples. After picking 10 pounds of Enterprise apples at a local orchard last weekend, I thought that shrimp and apples sounded like a good combination for a meal - and it was!
Marinating the apples and shrimp together then grilling on skewers was easy and a nice change of pace for dinner. I'm always game for trying something new.
After soaking the wooden skewers for at least 30 minutes in water, I loaded them up, alternating the apples with the shrimp. Then popped them on the grill, cooking about 5 minutes on each side (this cooks up quickly!) over 350° heat.
The shrimp and apple flavor together was so good. I served with a cucumber, tomato & pepper salad and some hot buttered sourdough bread. Hope you like this one!
Shrimp & Apple Kabobs
Ingredients
3 Tablespoons Honey
3 Tablespoons Olive Oil
1 Tablespoon Basil, chopped
1 Tablespoon of Jam (I used Wills Family Orchard Strawberry Rhubarb jam - photo and link below)
1/4 teaspoon of crushed pepper flakes
1 clove minced garlic
2 Tablespoons of vinegar (preferably red wine, rice or white balsamic)
1 Tablespoon of lemon juice
2 apples, each cut into 8 slices
16 raw jumbo shrimp, peeled and deveined
Directions
Soak wooden skewers in water for at least 30 minutes; then drain.
Marinate the apples and shrimp in the list of ingredients for 30 minutes
Heat the grill to 350°.
Weave the apple slices and shrimp, alternating, onto skewers.
Grill about 5 minutes per side till shrimp is opaque.
Notes
I bought the apples and strawberry rhubarb preserves at Wills Family Orchard. The apples were organic, so no pesticides were used on them. And the preserves were so good! They have a variety of produce and other products at their store. It's worth a trip to visit.
