Shrimp & Apple Kabobs

Fall = Apples. After picking 10 pounds of Enterprise apples at a local orchard last weekend, I thought that shrimp and apples sounded like a good combination for a meal – and it was!

Marinating the apples and shrimp together then grilling on skewers was easy and a nice change of pace for dinner. I’m always game for trying something new. The shrimp and apple flavor together was so good. I served with a cucumber, tomato & pepper salad and some hot buttered sourdough bread. Hope you like this one!

Shrimp & Apple Kabobs

Ingredients

  • 3 Tablespoons honey

  • 3 Tablespoons olive oil

  • 1 Tablespoon fresh basil, chopped

  • 1 Tablespoon strawberry rhubarb jam

  • 1/4 teaspoon crushed pepper flakes

  • 1 clove minced garlic

  • 2 Tablespoons vinegar (red wine, rice or white balsamic)

  • 1 Tablespoon concentrated lemon juice

  • 2 apples, each cut into 8 slices

  • 16 raw jumbo shrimp, peeled and deveined

Directions

  • Soak 6 wooden skewers in water for at least 30 minutes; drain when ready to assemble.
  • Marinate the apples and shrimp with the rest of the ingredients for 30 minutes – while the skewers soak.
  • Heat the grill to 350°.
  • Weave the apple slices and shrimp, alternating, onto the skewers.
  • Grill about 5 minutes per side until shrimp is opaque.
