Tuna Tartare Salad

Seared sesame tuna over a garlic seasoned cauliflower mash, sautéed veggies and arugula. Cook the cauliflower mash and keep warm. Sauté the veggies and set aside. Sear the tuna following the directions. You can use the same pan as the one used for the veggies. Smear some of the mash on the plate, slice the tuna and spread it on the mash, add the sautéed veggies and a little bit of arugula tossed in salt, pepper and oil. Beautiful and delicious dish.

  • 2 -3 Tuna steaks

  • 1 teaspoon Garlic Powder

  • Salt & Pepper to taste

  • 3 teaspoons Black Sesame Seeds

  • 3/4 cup Red & Yellow Sweet peppers

  • 1/3 cup chopped onion

  • 2 cups Fresh Arugula

  • Olive or Avocado Oil

  • 1 pound cauliflower chopped (I used a bag already cut up)

  • 1 tablespoon melted butter

  • 1 tablespoon minced garlic

  • Salt & Pepper to taste.

Directions

  • Boil the cauliflower in a salted pot of water for about 10 minutes or until knife-tender. Drain and transfer to a food processor.
  • Puree the cauliflower with butter, garlic, salt and pepper. Keep warm.
  • Sautee the peppers and onion in a splash of oil to cook and soften. Set aside.
  • Season the tuna steaks with salt & pepper, garlic powder and sesame seeds, pressing the spices and seeds into the meat.
  • Heat up a cast iron skillet to medium /medium-high. Add in the oil till it shimmers then sear the tuna on each side for approximately 1-2 minutes. Center should remain rare.
  • Serve immediately.
